The old phone uses multiple button presses to select a letter. This is not efficient. To get an E, the commonest letter in English, requires two presses everytime.

The modern phone uses predictive text. The phone uses a dictionary to 'guess' which word you are most likely to be typing. This is much quicker, since you only have to press once for each letter.

This is interface design. Computer scientists call it "Human-Computer Interaction" or HCI. This is just one of many ways that computer science affects modern communications.
